It usally takes 1-3 mission to start free roam in red dead redemption 2 but some of the people's starts free rome from 2 mission. But at this time the free roam is not that playable. Because at this time there is a few interiors is in use to play.

Which things I can do after unlocking free roam ? 

There is lots of things to do like hunting, camping, robing the stores, geting a freash hair cut, playing mini games, horse riding, finding easter eggs, finding secrets, chasing ghost train, talking to bigfoot, finding ghost of the dead girl , finding donkey lady and etc.

UFO

You can spot a UFO in Red Dead Redemption 2, however it takes a chunk of labor to locate.
